    Deep in the interior of Kalimantan (Borneo), the Dayak tribes live by hunting for boars and raising domesticated swine. Because of their respect for nature and the environment, they are unwilling to waste—in fact, the meat from the jaw bone is tasty when it is boiled further, then wrapped in banana leaves with basil and grilled. Squeeze local lemon or lime over it and then dip into a fermented soybean sauce with vinegar, chilli, and garlic introduced by the Chinese.
    This dish* should be heated before serving; it is most commonly paired with rice wine and is a favorite of Dayak men as they sit and chat.

    *Beware of bones particles that may remain in the meat; chew carefully!
    * For best quality, enjoy within 24 hours.
